Working in Surgical Pathology has opened my eyes to the truth in that. Each day I see many parts of bodies; from biopsies to amputations to removals of various organs. A very small percentage of these surgeries truly stem from </span><br />

Getting too much of the macro-nutrients, like sugar, fats, animal proteins (meat, dairy, eggs, fish), alcohol and the like. And not eating enough of foods that contain a high level of micro-nutrients, namely fruits, vegetables and plant legumes, all of which naturally contain a healthy amount of macro-nutrients (sugars, fats, proteins). </span><br />

Have you ever considered the fact that, not getting your brain the micro-nutrients in the bio-available (nutrients from plant-based foods are easily adsorbed , pills and supplement not so much. That's still up for debate in my book but I've always liked breakfast. Especially those that contained eggs. Of that once in a blue moon, chicken fried steak or really good homemade corn beef hash. Truth is while ideally plant-based eating is free of all meat, dairy and eggs, it is not "Vegan" by definition. Therefore, having any of those three while eat plant-based, is not some violation of set philosophies or shattering of cardinal rules. As may be the case in adopting truly Vegan lifestyle. Additionally, one of the first important steps a person can make towards living a plant-based lifestyle is to go with small vegetarian steps. Thus having an egg for breakfast along side of a great fresh fruit salad, green drink, or smoothie, might be a great first move in the "<a href="http://eatplantsdiet.blogspot.com/2012/01/step-2-become-kid-again.html" target="_blank">Action Stage</a>" of change I wrote about lastweek. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span><br />

With occasional vegetarian and omnivorous "give ins," mostly when I'm out and about. </span><br />

<li><span style="font-family: Arial, Helvetica, sans-serif;"><b>Whole grain breads-</b> spread with nut butters, fresh or dried chopped fruit Or go savory with hummus, vegan cheeses, cashew "cheese", tomatoes, sunflower seeds, sprouts and greens</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;"><b>Fresh juices-</b> combos of fruits and veggies ran thru the juicer, can give you all the calories, protein, and nutrients you need in one glass.</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;"><b>Green drinks-</b> similar to a smoothie but features 40-60% or more green leafy veggies. Lots of fiber! These drinks are s</span><span style="font-family: Arial, Helvetica, sans-serif;">omething our bodies are dying for.</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;"><b>Vegan <a href="http://meatlesslymouthwatering.blogspot.com/2011/11/greens-quiche-from-new-york-times.html" target="_blank">quiches</a>-</b> can be made in some many combos. A great weekend treat and plenty of quick weekday leftovers</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;"><b>Breakfast salads-</b> think lots of fresh fruits, light citrusy or sweet creamy dressings, maybe some dried fruit, a few soft greens or sprouts, some nuts and or seeds sprinkled on top!</span></li>

Why because, it’s almost like you get to be a kid again! This is where you are going to explore and discover. It’s exciting and maybe a little bit scary. Your creative juices start to flow. You are learning so many new things. Your brain starts coming up with new ideas that have never even been in your head before. You don’t have to be concerned about ‘getting the right answer,’ ‘understanding everything,’ ‘knowing what to do next,’ or any of those ‘grown up’ things. </span><br /><span style="font-family: Arial; font-size: 15px; font-weight: normal; text-decoration: none; vertical-align: baseline; white-space: pre-wrap;"></span><br /><br /><span style="font-family: Arial; font-size: 15px; font-weight: normal; text-decoration: none; vertical-align: baseline; white-space: pre-wrap;">You just start digging through information, playing with new ideas and building your knowledge base. No one is there to force you to do this or that. No one even has to know your thinking about changing anything. You can read a little something, then try it out a bit or not, it’s all up to you! You just get to have FUN! </span><br /><span style="font-family: Arial; font-size: 15px; font-weight: normal; text-decoration: none; vertical-align: baseline; white-space: pre-wrap;"></span><br /><span style="font-family: Arial; font-size: 15px; font-weight: normal; text-decoration: none; vertical-align: baseline; white-space: pre-wrap;">And here’s the other cool part, as you go down this new path of plant-based eating you get to keep coming back to this step of being a kid again. As you get a little knowledge you will naturally want to try it out eventually. Your curiosity will just get the best of you and your going to ‘just have to try that vegetarian recipe’ or ‘try to recreate an old family recipe with plant-based ingredients.’ This is going to be part of the fun! Remember ‘mud pies’ when you were a kid. LOL But guess what, these ‘mud pies’ are all small steps of the next stage “Action.” But, because you are still learning, you will eventually get to go back to the “Preparation Stage” and be a kid again! For some the “Contemplation Stage” of switching to a plant-based verses meat-based way of eating is a simple mental list of reasons. This list can go on and on, but looks something like this: Think about the environmental impact on the plant. Think of the economical impacts your current meat based way of eating has. Think of the way animals in ‘factory farms’ are mistreated. Think of those you know who eat healthier and what benefits they seem to have. For some these reasons may be enough to motivate you to move to Step 2</span><br />

She was telling me of her weight struggles and I was telling her my personal success story with with my weight, eating a plant-based diet. I was telling her how simple it was really, that all you have to do is (for the most part) stop eating (or at least greatly limit) meat, dairy and eggs. Then added in more fruits, veggies, legumes, and plant-based foods. Her response, "So what <i>DO</i> you eat!?!?" </span><br />
